In God We Trust

We see the words "In God We Trust" printed on our American paper currency and on our metal coins, but just where did the phrase come from and how did it end up on our monetary currency and coins?  Isn't our American monetary currency part of our government?  Is there not supposed to be separation of church and state according to our Constitution?
